Meet the Chefs
Chef Katsumine Fukuyama brings over a decade of experience shaped by years of training in Japan and refinement in New York.
His foundation was formed in Kawasaki and Okinawa, where he developed a deep respect for seasonality, precision, and the natural character of each ingredient. Rooted in the principles of Edomae-style sushi, his approach values restraint, allowing the fish, the rice, and time itself to speak. His craft is quietly distinguished by a personal heritage, informed by a traditional sushi rice recipe passed down through generations from his grandfather.
In New York, his experience has evolved into a singular focus on balance and purity, further deepened by his work with seafood at its source. This connection informs a style that is both disciplined and intuitive.
